 2/24/2005  Hi Dan and Deb I know drugs are effective but I saw this on the mayo.com's nutrition site and thought of you. -------------------- It depends on how much and what type of fiber you consume. But high levels of fiber may adversely affect mineral absorption. In general the insoluble fiber found in whole wheat is more likely to interfere with mineral absorption than soluble fiber found in oats dried beans and fruit. Also two substances called phytate and oxalate found in the husks of grains seeds dried beans and some vegetables may inhibit absorption of iron calcium and zinc. ------------------- Great Harvest Bread has some really tasty 100% whole wheat breads.
